Tomatillo-Avocado Dip/Sauce

Tomatillo-Avocado Dip or Sauce

This is SO good. For those who don’t know, tomatillos are green tomatoes that look like they’ve been wrapped in paper.

5 tomatillos, remove “paper” husk

1/2 onion, sliced

3 cloves galric

1-2 serrano peppers (depending on how hot you like it)

1 Tbsp cilantro, chopped (you could add more if you like)

2-3 large dallops sour crean

1 avocado, peeled & pitted

Salt to taste

Place tomatillos, onions, and garlic in a baking dish. Bake at 500 degrees for 15 minutes. Place halved tomatillos, onion, garlic in blender with diced serrano peppers, sour cream, avocado, and cilantro. Pulse until desired consistency is reached. Add salt and pulse to mix.

This is great as a chip-and-dip, but we also put it on our fajitas and it was beyond yummy!

Peek-a-boo

This is Miss Kate literally laughing herself silly…almost to the point of hyperventilating. This is what happens when we play peek-a-boo with her. Carson is the same way. They love to play, and it could go on for for a good 30 minutes.

She looks a little goofy in the above phone, but you can see her four new teeth. Now that they have all broken through, she has been in a much better mood.
